Protein and Fibre Cookies Recipe

I stopped liking my lunches lately, even salmon with cranberry sauce is boring for me at the moment. I realised I enjoy small portions of food, like a banana and then in two hours a sandwich or bowl of cereal (yep, for lunch).

All my last week’s meal prep landed in the bin, I just couldn’t force myself to eat that, so I decided to do something different this week and I made these PROTEIN AND FIBRE COOKIES because I saw them in Holland and Barrett and I thought, well, I will try to make them myself.

They came out super tasty and I thought it’s a good recipe to share with you!

Recipe

Preheat the oven to 200.

Ingredients

1 egg (From Farmdrop of course, free chicken, happy chicken)
2,5 tbsp of Peanut Butter (Pip & Nut the best I ever had, also from Farmdrop)
50g of wholemeal spelt flour Doves Farm Organic 
50 g of grounded oats, like oat flour
2 tbsp of fibre. I used apple powdered fibre from Polish company, I really don’t remember where is it from.
2 tsp of honey or any other sweetener, it’s up to you. I just like to add honey to my cooking during the horrible wet weather. And again I used organic Polish honey, no name.
2 tbsp of coconut oil (melted)
2 tbsp of cocoa. Again Polish brand.

Combine everything together. The dough should have a consistency that enables you to form cookies, if it’s too thick, you can add some coconut oil or even milk, if it’s not thick enough, just add oats or spelt flour and then form your cookies!

Reduce the oven temperature to 175 Celsius and bake your cookies for 20 minutes. After that time check on them, they may require 5 minutes more.

They are really nutritious, have plenty of protein, lots of fibre, contain good fat and they taste very good! Hope you will enjoy them!
